Vegan
- brussels sprouts with coconut rice (amazing sprouts, I often skip the avocado and herbs out of laziness, DELICIOUS even without) – Love and Lemons / Cookie and Kate
- butternut squash soup with crispy lentils (fall in a bowl, great with or without lentils) – Rainbow Plant Life
- kung pao tofu (gingery, a bit annoying to fry the tofu but so worth it, use black vinegar, feel free to sub scallion for leek) – China Sichuan Food
- scallion pancakes (addictive, best fresh, feel free to sub ground ginger) – Bon Appetit
- smacked cucumber with chili oil (crunchy, savory, spicy, YUM) – Pickled Plum
- tofu chilaquiles (so good meat-eaters also love it, use premade tortilla chips to make it super easy) – Minimalist Baker
- tofu piccata (crispy, lemony, capers) – From My Bowl
- vegan thai curry vegetables (sub for whatever veggies, use a little too much soy sauce, throw in tofu if the mood strikes) – NY Times Cooking
Vegetarian
- cucumber gazpacho (magnificent on a hot day) – Feating at Home
- gnocchi al pomodoro (herby tomato sauce, cozy goodness) – Foodie Crush
- Haley's noodles (stir-fry noodles with veggies and egg in yummy sauce)
- roasted acorn squash and gorgonzola pizza (great on store-bought dough, totally decadent and delicious) – Smitten Kitchen
- spicy and tangy broth with crispy rice (surprisingly easy and so comforting, adjust spice to preference) – Bon Appetit
